Shortbread Hearts

What you need

250g butter – softened

50g caster sugar

250g plain flour

125g cornflour

How to make it

1.   Pre-heat oven to 170C/325F/Gas Mark 3.

2.  Cream the butter and sugar together

until pale and fluffy. Sift the flour and cornflour onto the mixture until you have a smooth dough. Wrap the dough in cling film and chill in the fridge for at least an hour.

3.   Unwrap the dough and roll out onto a floured surface until about 1.5 cm thick. Cut out heart shapes using a cookie cutter.  If need be, gather up the left over bits, form into a ball and roll out again – beware of too much handling of the dough though.

4.  Place the heart shapes on a silicone-lined baking sheet and bake for 30-40 minutes until pale and golden. Transfer to a wire tray to cool.
