Chocolate Guinness Cake

What you need

110g butter – softened

275g light soft brown sugar

2 large eggs, beaten

200ml Guinness

175g plain flour – sifted

50g cocoa powder

1 tsp bicarbonate of soda

½ tsp cream of tartar

 

How to make it

1.   Pre-heat oven to 180C/350F/Gas Mark 4.

2.   Line a 2lb/900g loaf tin.

3.   Cream the butter and sugar until pale and fluffy. Beat in the eggs a little at a time. Add the Guinness and stir well.

4.  Add the flour, cocoa, bicarbonate of soda and cream of tartar. Fold the dry ingredients into the wet and pour into the tin.

5.   Bake for 40-45 minutes

(or until skewer comes out clean). If the cake looks like it is getting overdone on top, cover with some greaseproof paper while it finishes cooking.
